Careys Manor Trainee Raises the Bar in Cocktail Competition

A talented young bartender at the luxury Careys Manor Hotel in the New Forest has reached the finals of an international cocktail competition. Kris Insatorn, 18, who is also a student at Brockenhurst College, won the student bartender category in the national heat of the Calvados Nouvelle Vogue International Trophies, and went on to compete against 60 other bartenders and students from 14 countries at the finals in Caen.

The brief was to devise an imaginative, vegetable-themed cocktail with a Calvados base. Kris looked to his Thai heritage to create his winning Thai Twist, a Calvados cocktail with sweet red chilli, coriander and lemongrass syrup, lime juice, Malibu and double cream. He won the student category, and his cocktail was awarded seventh place overall when scored against the professional bartenders.

Kris said: “I wanted to use the flavours of Thailand, which is where I was born. I love a Thai curry, so I took that as my inspiration and served my cocktail in a rice bowl garnished with a slice of lime and a red chilli.” Kris plans to work in restaurant management after college, and is currently training at the Thai Zen Garden restaurant at Careys Manor in Brockenhurst, where his mother, Ging, works as a therapist at the luxury Thai SenSpa.

Careys Manor Hotel’s general manager Sunil Kanjanghat said: “We are absolutely delighted that Kris’s talent has been recognised in this way, and we are planning to put his Thai Twist cocktail on the menu at Zen Garden.”

This is the second year of success for the Greenclose Hotels group, which includes Careys Manor Hotel and the Montagu Arms in Beaulieu. Last year, Mark Russell, a commis waiter at the Montagu Arms, won the 2017 trophy in the student category.
