Commis Chef – Le Blaireau Bar & Bistro

Type – Full time, permanent. 48 hrs per week working 5 days out of 7 (including weekends) on a rota basis.

Reports to – Head Chef, Le Blaireau

Location – Le Blaireau at Careys Manor Hotel is situated 5 minutes’ walk from Brockenhurst Village and train station with excellent rail links to Bournemouth, Southampton and London. The New Forest is a lovely setting with ponies, deer and other animals roaming throughout the Forest and its villages, and beautiful surroundings.

Careys Manor Hotel is a luxury four-star hotel and spa located in the New Forest National Park in Hampshire, England.  Situated in the grounds of Careys Manor, you will find Le Blaireau French Bistro and Bar, which offers guests a relaxed, laid back atmosphere and a taste of France in the New Forest. We pride ourselves on our friendly staff and attentive service.

We are looking for an enthusiastic Commis Chef to join our friendly kitchen team at Le Blaireau.  Under the guidance of Head Chef, Rawin Uoonjantre, this is a superb opportunity to work with the finest quality, organic seasonal ingredients sourced as locally as possible.

We are looking for a chef who takes pride in maintaining a clean and safe environment and is eager to develop within the team.

Main Responsibilities:

  • Prepare all food items as directed in a sanitary and timely manner
  • Produce dishes as per Head Chef’s instruction, maintaining consistency and high quality for our guests
  • Make sure all Mise en place meets the required high standards set by Head Chef
  • Help with the day-to-day cleaning and organisation of the kitchen, equipment, dry stores, veg stores and main cool room
  • Take a proactive role in the team, identifying and resolving issues as well as sharing ideas for improvements.
  • Operate standard kitchen equipment safely and efficiently
  • Maintain a clean working station whilst adhering to all food safety and health & safety standards
  • Restock items as needed throughout the shift
  • Record food temperatures

The role is full time (48 hours per week), with a rota operating on 5 out of 7 days per week.  We do have staff accommodation (subject to availability) and it is a good base to explore the South Coast.  The hotel is situated 5 minutes’ walk from Brockenhurst Village and train station with excellent rail links to Bournemouth, Southampton and London.
