Starters include celeriac and apple soup with roast apple, a risotto of butternut squash with hazelnuts, sage and pickled onion, and salt-backed beetroot, panisse, coconut yogurt and walnuts.
The main event could be chestnut, parsnip and quinoa-stuffed cabbage with roast root vegetables and caramelised onion, roast spiced cauliflower with lentils, greens, onion bhaji and pickled golden raisins, or salt-baked celeriac with smoked mushrooms, Jerusalem artichoke, black garlic and Brussel sprouts.
A selection of delicious puddings includes roast pear with stem ginger, prunes and Armagnac, and crispy brique pastry, a raisin and kumquat compote with oat streusel and clementine sorbet, and a dark chocolate and coconut delice with mango and passionfruit sorbet and cardamom.
