If you’re a vegetarian or a vegan, the chances are you’ll have spent many a Christmas Day gamely tucking into soggy nut roasts and bland mushroom parcels.

We think it’s time to change all that, and spending Christmas with us ensures no one is left out when it comes to a creative and delicious festive feast.

And when it’s time for Christmas lunch, Alistair Craig, head chef at our Cambium restaurant, is serving up a cracker, with a bespoke vegetarian and vegan menu that puts an innovative spin on everyone’s festive favourites.

Starters include celeriac and apple soup with roast apple, a risotto of butternut squash with hazelnuts, sage and pickled onion, and salt-backed beetroot, panisse, coconut yogurt and walnuts.
 
The main event could be chestnut, parsnip and quinoa-stuffed cabbage with roast root vegetables and caramelised onion, roast spiced cauliflower with lentils, greens, onion bhaji and pickled golden raisins, or salt-baked celeriac with smoked mushrooms, Jerusalem artichoke, black garlic and Brussel sprouts.
 
A selection of delicious puddings includes roast pear with stem ginger, prunes and Armagnac, and crispy brique pastry, a raisin and kumquat compote with oat streusel and clementine sorbet, and a dark chocolate and coconut delice with mango and passionfruit sorbet and cardamom.
After all that delicious food, a wonderfully lazy Christmas is there for the taking. You can sink into a sofa in front of the fire, or indulge in some gorgeous pamper treatments at SenSpa.
