Cambium's New Menu has Launched

Cambium is excited to announce the launch of our new menu!

From autumnal butternut squash soup to a warming spiced pineapple tarte tatin, you won't be able to resist these dishes inspired by the seasons! Head Chef Alistair's aim is to re-interpret dishes by bringing together classic favourites with flavours from around the world, to create a unique take on modern British cuisine. 


Our top dishes to try:

To start: Salt baked root vegetable salad, goat’s cheese, pomegranate molasses

This bright and beautiful starter tastes just as good as it looks! The melt in your mouth goats cheese matches perfectly with the saltiness of the vegetables and hint of sweetness from the pomegranate.

To follow: Rump of lamb, pressed rosemary potato, salsa verde

A classic dish with a modern take, this winter warmer is certainly one to try. The succulent lamb marries together with the rosemary potato perfectly.

To follow: BBQ cauliflower, Israeli couscous, preserved lemon, ras el hanout coconut yogurt

A delicious option for vegan diners, this dish brings a taste of the middle east to the New Forest.

From the grill: Cambium Beef burger

We know that many are excited for this one! Introducing, the Cambium beef burger. This delicious burger is served with dill pickles, smokey tomato chutney and fries. We think it is mouth-wateringly good.

From the grill: Tandoori spiced Spatchcock chicken

The Spatchcock chicken is the perfect dish to share! Served with a quinoa salad, cucumber, yogurt and bhaji this spiced dish is a delight for the taste buds.

Dessert: Apple and cinnamon crumble tart, blackberry sorbet

A lovely dessert for the chilly autumn evenings ahead of us. An apple and cinnamon tart screams home comforts and sleepy evenings by the fire.
