We’re pleased to be part of the 10th annual Lymington Seafood Festival and to be sponsoring the Chef’s Stage and Cookery School, a key feature of this celebration of seafood, live music, artisan stalls, and top-tier chef talent, set against the stunning Solent backdrop.

Catch our chefs in action on the Chef’s Stage and in the cookery school, hosted by broadcaster and writer Chris Bavin, who’ll be guiding the audience through each demonstration.

LYMINGTON SEAFOOD FESTIVAL TICKETS 

Chef’s Stage – 3.50pm

Join Cambium’s Head Chef Dylan James and Sous Chef Louis Haynes as they serve up two exquisite seafood dishes – refined, seasonal, and rooted in the rich flavours of the Hampshire coastline.

Cookery School – 4.30pm

Songkiat Surin, Head Chef of Thai restaurant Zen Garden, leads an engaging, hands-on cooking class, guiding guests through the vibrant, aromatic world of Thai cuisine. Participants will create an authentic Thai menu, starting with Par Goong – a spicy prawn salad bursting with kaffir lime, lemongrass, tomato, mint and coriander – followed by Pad Cha, a deep-fried seabass fillet served with a fragrant red curry sauce and peppercorns that deliver a satisfying spicy kick.

Complementing the experience, beer expert Melissa Cole will be on hand to pour and introduce perfectly paired drinks, helping to balance and cool the palate throughout the session.

Meet The Chefs

Dylan James – Cambium Head Chef

Dylan brings a wealth of culinary experience to Cambium, having worked in some of the UK’s most prestigious kitchens, including The Goring and Lympstone Manor under celebrated chef Michael Caines. He also fulfilled a lifelong ambition by working in France at a restaurant near Cognac, where daily market visits inspired seasonal menus and offered full immersion in French cuisine—and language.

Dylan joined Careys Manor in 2018 as Junior Sous Chef and has since brought his creativity and passion for fresh, flavour-driven dishes to the heart of the Cambium kitchen, where he now leads the team as Head Chef.

Songkiat Surin – Zen Garden Head Chef

Songkiat’s culinary journey has taken him across the globe, beginning in Tel Aviv before returning to his native Thailand to work at prestigious five-star hotels, including the Royal Cliff Beach Resort and Sofitel Bangkok Sukhumvit. In 2007, he brought his expertise to the UK, refining his craft at Bann Thai in Worcester and later at Daylesford Organic Farm, where he embraced a passion for sustainable, organic produce.

He first joined the Zen Garden team in 2013, and in 2024, returned as Head Chef. With a love for fusion flavours and traditional Thai techniques, Songkiat brings creativity, authenticity, and heart to every dish.
