James Hiley-Jones

James begun his career in the 90s on Careys Manor's trainee management programme. Following that James gained further experience at a series of 4 and 5 star hotels, before returning to take the reigns of our sister hotel the Montagu Arms in 2001. James then took on the challenge of General Manager at Careys Manor in August 2004 to coincide with the opening and launch of the £6 million spa, SenSpa. Now Managing Director at our parent company Greenclose Hotels, James is continually striving to improve hotel standards and maintain Careys Manor's title as one of the highest ranked 4 star hotels in the country.

Area General Manager

Steve Woodrow

Steve came to Careys Manor from the Solent Hotel and Spa in Fareham, where he was general manager for five years, overseeing a 117-bedroom hotel, 13 meeting rooms, and a 1 rosette restaurant and bar and spa. Steve also opened a new £5m 54-bedroom Lodge expansion at the Thwaites-owned hotel, which won AA Hotel Group of the year 2017-18.

Spa Director

Lina Lotto

With a lifelong interest in holistic health and wellbeing, Australian-born Lina has worked in spa development, management and marketing in Asia, Australia and the UK. In Thailand, Lina was spa consultant to the Dusit International Group and was made programmes director on the board of the Thai Spa Association in 2003. Lina came to the UK in 2004 to set up the new £6 million SenSpa at Careys Manor Hotel in Brockenhurst.

Head Chef

Alistair Craig

Alistair’s passion for cooking began at Northbrook Catering College, where he began to experiment with flavours and developed a belief that food should evoke all senses. He started his career as Sous Chef at Cambium’s sister restaurant, The Terrace, at The Montagu Arms in Beaulieu and in 2013, Alistair became Head Chef at The Horseshoe Inn in Scotland creating a menu of traditional Scottish dishes.

After three years, Alistair returned to the New Forest to serve as Head Chef at Cambium, where he developed his own style focusing on simplicity, quality of ingredients and presentation.



Vassana Chunchat
Therapist

Vassana Chunchat

Vassana came to SenSpa from the Mariott Hotel in Phuket, Thailand which is where her love for therapy began. Having joined in 2005 Vassana says that the supportive environment, from her managers and team, along with her passion for therapy has kept her at SenSpa all these years. A keen rambler, Vasanna loves to explore the New Forest and enjoys the peace and tranquillity that the forest brings.

Food and Beverage Manager

Camden Ferrara

Camden started his career in hospitality at St Michaels Resort in Falmouth as Food and Beverage Assistant quickly rising through the ranks to Food and Beverage Supervisor. In 2016 Camden moved to Guernsey joining boutique hotel The Farmhouse where he was promoted to Food and Beverage Manager. Careys Manor’s multiple food and beverage outlets caught Camden’s attention and he joined in 2018. Camden has brought his passion for hospitality with him, encouraging and empowering the team. Camden takes great pride in the positive training and development of others.

Therapy and Training Manager

Tina Herridge

Tina, winner of Body Therapist of the Year (British Spa and Beauty Awards 2009), has been with SenSpa since it opened in 2004. After becoming Senior Therapist, Tina furthered her training by attending Wat Po in Bangkok, the first official Thai massage school in Thailand. On her promotion to Head Therapist, Tina undertook further training in management and a diploma in teaching which led to her becoming SenSpa’s Therapy and Training Manager.

Wedding & Function Sales Manager

Françoise Gysemans

Françoise has vast experience working in the hospitality industry from running her own restaurant to working on reception and becoming a wedding co-ordinator. Françoise joined Careys Manor as Wedding and Special Events Co-ordinator in 2002. Since then, she has planned thousands of weddings from intimate gatherings to larger themed events, not to mention the hundreds of special events from baby showers to golden wedding anniversaries.

Event Sales Manager

Jessica Cleary

Jessica began her career in 2007 as a Cruise Representative Consultant at Carnival UK. Following her time at Carnival UK Jessica moved in to the hotel industry gaining vital experience in sales and events working at other Hampshire venues including Aviator a Hotel by TAG, Grand Harbour Hotel and Rhinefield House. Jessica joined Careys Manor in 2019 originally covering maternity leave but later becoming a permeant member of the team.
