Meet The Chefs
Dylan James – Cambium Head Chef
Dylan brings a wealth of culinary experience to Cambium, having worked in some of the UK’s most prestigious kitchens, including The Goring and Lympstone Manor under celebrated chef Michael Caines. He also fulfilled a lifelong ambition by working in France at a restaurant near Cognac, where daily market visits inspired seasonal menus and offered full immersion in French cuisine—and language.
Dylan joined Careys Manor in 2018 as Junior Sous Chef and has since brought his creativity and passion for fresh, flavour-driven dishes to the heart of the Cambium kitchen, where he now leads the team as Head Chef.
Songkiat Surin – Zen Garden Head Chef
Songkiat’s culinary journey has taken him across the globe, beginning in Tel Aviv before returning to his native Thailand to work at prestigious five-star hotels, including the Royal Cliff Beach Resort and Sofitel Bangkok Sukhumvit. In 2007, he brought his expertise to the UK, refining his craft at Bann Thai in Worcester and later at Daylesford Organic Farm, where he embraced a passion for sustainable, organic produce.
He first joined the Zen Garden team in 2013, and in 2024, returned as Head Chef. With a love for fusion flavours and traditional Thai techniques, Songkiat brings creativity, authenticity, and heart to every dish.
