Cambium Pastry Chef Ben Moore Shares His Chocolate Mousse Recipe
Celebrating Chocolate Week at Careys Manor
Rich, velvety, and irresistibly indulgent — chocolate deserves its own celebration. And here at Careys Manor Hotel & SenSpa, we’re marking Chocolate Week with a showstopping dessert straight from the kitchens of Cambium, our flagship New Forest restaurant.
This Chocolate Mousse with White Top and Walnut Praline brings together textures and flavours that capture everything we love about fine dining — creativity, craftsmanship, and pure pleasure in every bite.
Chocolate Mousse with White Top and Walnut Praline
Serves 2
Mousse ingredients:
- 6 eggs separated
- 250g dark chocolate
- 20g butter
- 250g double cream
- 70g sugar
White top ingredients:
- 1 gelatine leaf
- 15g water
- 30ml milk
- 20g sugar
- 20g gelatine mass
- 70g cream cheese
- 300g double cream
Walnut praline ingredients:
- 100g walnuts
- 100g caster sugar
Mousse method:
- Separate 6 eggs
- In a bowl over a Bain Marie (or alternative steaming method such as a glass bowl over a saucepan of soft boiling water) melt the dark chocolate and 20g of butter
- Once the chocolate and butter are melted, fold in 6 eggs yolks then leave to cool slightly
- Whip the double cream to soft semi whipped cream, fold this through the chocolate mix
- Whip together 70g of sugar and 6 egg whites to hard peaks, fold this gently through the chocolate mix trying not to take out the air you made whilst whipping the whites.
White top method:
- Melt together 1 gelatine leaf with 15g of water – this creates 20g of gelatine mass
- In a pan combine the 30ml of milk, 30g of sugar and 20g of gelatine mass
- Add this to a blender and blend with 70g of cream cheese
- Mix with 300g of double cream and set
Praline method:
- Melt 100g of sugar in a pan until golden brown, mix with 100g of smashed walnuts and pour over a tray
- Leave to cool completely and break into edible sizes pieces
Assemble in a dessert glass or dish of your choice and enjoy!
