Festive Dining at Cambium

Inspired by the New Forest, experience dishes created using locally sourced ingredients and executed with a striking twist makes Careys Manor’s flagship restaurant, Cambium, the place to meet and celebrate this Christmas.

Festive Dining Menu

Smoked ham hock caper and parsley terrine, celeriac remoulade, ciabatta crouton (df/nf – can be gf on request)
Salmon gravadlax, smoked mayonnaise, pickled slaw (gf/nf – can be df on request)
Goats cheese, beetroot and walnut salad, hazelnut dressing (gf)
Honey glazed parsnip soup, parsnip crisps, herb oil (gf/df/nf)

Roast breast and leg of turkey, chestnut and sage stuffing, pig in blanket, fondant potato, glazed carrots, sprouts (gf – can be df on request)
Slow roasted pork belly, Dauphinoise potato, broccoli, confit shallot, glazed carrot, cider and sage sauce (gf/nf – can be df on request)
Grilled hake fillet, seaweed butter fondant potato, warm tartare sauce (gf/nf)

Lunch – £37.50 per person

Dinner – £45 per person

Price is based on a minimum of 8 guests.  Lunch available 7 days a week from 12pm to 2pm. Dinner is available Monday to Thursday with tables bookable from 6.30pm.
