Restaurant Manager – Cambium Restaurant (Maternity Cover)

Type – Full time, permanent. 48 hours over 5 out of 7 days, including weekends.

Reports to – Hotel Operations Manager

Location – Careys Manor Hotel is a luxury four-star hotel and spa located in the New Forest National Park in Hampshire, England.

Cambium offers our diners cuisine to a three Rosette standard with emphasis on simplicity, exacting flavour combinations and exemplary presentation. We now require a passionate Restaurant Manager to join this ambitious and progressive team.  We pride ourselves on our friendly staff and attentive service.

We are seeking an organised Restaurant Manager whose focus is planning, resourcing and delivering exceptional customer service for our guests. You will have responsibility for the hotel’s Cambium Restaurant alongside private functions, weddings, afternoon tea and corporate events.

We want a brand ambassador who will nurture an honest and open workplace, someone who shares our passion and our drive not only to succeed, but to exceed expectations. You will have meticulously high standards and a keen eye for detail. A major part of this role is to build the reputation of the restaurant whilst supervising and developing a team of staff, overseeing weddings and banqueting, budgets and rotas.

Main Responsibilities:

  • Oversee the day to day running of the department and manage, train and develop the team effectively, always maintaining four star standards
  • Review and consider improvements for service, standards and procedures, always looking at new ways of delivering exceptional customer service at all times
  • Liaison with Head Chef/Events Operations Manager and other departments to ensure customer experience is seamless
  • Ensure that appropriate Health & Safety and company standards are consistently maintained, through training, monitoring and development, and updating operating procedures as required
  • Drive team objectives, briefing and focusing staff on shared goals, upselling opportunities and maintaining up to date knowledge
  • Handle customer complaints effectively and act upon any feedback
  • Be visible at all times during service
  • Create cleaning schedules for restaurant, service areas and public areas linked to restaurant, ensuring all areas are serviced, clean and tidy
  • Ensure the payroll is in accordance with budget
  • Have excellent product knowledge of menus/wine lists and company products

Our ideal candidate will:

  • Be a passionate individual with excellent spoken English, leadership skills and wine knowledge
  • Have relevant four star hotel or fine dining experience (two/three Rosette)
  • Have a high standard of personal presentation
  • Possess excellent communication skills
  • Be a good team motivator, able to inspire others to raise the bar, and have a flexible and enthusiastic attitude to work

The role is full time, with a rota operating on 5 out of 7 days per week. The hotel is situated 5 minutes’ walk from Brockenhurst Village and train station with excellent rail links to Bournemouth, Southampton and London.
