Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. Our name is reflective of our love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area.

Head Chef Alistair Craig's traditional dishes capture the essence of the local area and embrace the nature of the seasons.

“I like to use local ingredients in a worldly way reinterpreting a dish to take advantage of the local area’s rich natural resources”.

As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.

Cambium will be closed from Sunday 22nd March-Sunday 29th March.

Please Note: No children under the age of 8 are permitted to dine in the restaurant.

The interior of Cambium was created by designers Sue and Bonnie Stowell. Their inspiration came from the New Forest itself with nature leading the way on the design scheme. Hand painted English trees adorn the walls, the chairs are upholstered in moss like fabric and bespoke oak leaf golden screens separate the diners, introducing an intimate dining experience.

About the Chef

Alistair’s inspiration for his dishes begins with finding the best regional ingredients and fresh produce, some of which comes from our own kitchen garden. 

Alistair’s career began at Cambium’s sister restaurant, The Terrace, at the Montagu Arms Hotel in Beaulieu. Under the wing of Roux Scholar, Matthew Tomkinson, he was taught by best and was given the opportunity to work as Sous Chef. 

Hungry for a new challenge, he left in 2013 for The Horseshoe Inn, a small 2 AA Rosette restaurant in Scotland. Dubbed by Michelin and The Good Hotel Guide as one of Scotland’s best restaurants before Alistair settled back in the beautiful New Forest at Careys Manor’s flagship restaurant, Cambium.
