We are proud to announce that we have partnered with 'Dancing Cows', local creators of artisan Gins and craft ales. We visited their distillery in Lymington to find out more about the range of drinks we'll be offering at the Cambium bar.
As we opened the door to the distillery, we met the owner, Richard and were welcomed with a freshly brewed cup of American IPA Beer and listened to how the Dancing Cows story began.
After setting up a microbrewery in Lancashire in 1993, which ran for 11 years, the business was sold to a small hotel group and Dancing Cows moved to the New Forest having already achieved numerous awards for ales and bottled beers. Dancing Cows use all local ingredients and traditional methods to produce the finest beers and spirits.
The first gin we tasted was their Lymington Gin. This Gin is distilled to 43% and packed with amazing flavours and locally sourced ingredients such as juniper, coriander seeds, angelica root and seeds, orris root, bitter orange peel, cardamom, fresh lemon zest and sweet almonds.
Next, we tried the brand new New Forest Oak Aged Gin, our favourite of the two Gins we sampled. This had a combination of oak sherry cask and American oak chips to give the colour and flavour, resulting in a very smooth Gin overlaid with vanilla and sherry notes.
This is also the ingredients used for the Dancing Cows whiskey; the smell of delicious toffee was so good and we’re so excited that it’s coming soon!
