Inspired by nature, our flagship restaurant, Cambium is a creative and enchanting dining experience. Nurtured by hand and harvested with car, Head Chef, Alistair Craig’s traditional dishes pay homage to the British countryside and embrace the nature of the seasons. It’s constantly evolving, just as the name Cambium reflects.
In celebration of British Food Fortnight we are showcasing some of Cambiums NEW menu, and the stories behind these delicious dishes.

Chestnut mushroom risotto, salt baked celeriac, pickled mushrooms, kale
A comforting dish incorporating ingredients that are at their best in Autumn.
Celeriac - It may appear to be just an ugly, uninteresting, knobbly root but celeriac has inner beauty. The flesh - crispy when raw, silky smooth when cooked - has a delicate taste which suggests the flavours of celery and parsley with a slight nuttiness.
Apple Tart, almond, clotted cream
Using apples from UK orchards
Lemon curd, poppy seed cake, toffee sauce, meringue
A bite of Britain - Home-made sweet sharp lemon curd, freshly baked cake and lashings of toffee sauce and Meringue
Barkham Blue cheese, Crackers, celery, Quince
A blue cheese from Hampshire. The deep yellow moist interior is spread with dark blue – green veins. It has a rich blue taste, smooth buttery texture with a melt in the mouth flavour, without the harshness associated with some blue cheese.
