Nurtured by hand and harvested with car, Head Chef, Alistair Craig’s traditional dishes pay homage to the British countryside and embrace the nature of the seasons. It’s constantly evolving, just as the name Cambium reflects.
In celebration of British Food Fortnight we are showcasing some of Cambiums NEW menu, and the stories behind these delicious dishes.

As the temperature starts to fall, this is a warming and comforting dish using one of Alistair’s favourite autumn ingredients –squash. Spiced pumpkin seeds add a kick of flavour and added texture

Our free-range chicken comes from Merrifield farm in the beautiful Devonshire countryside. They’ve been farming with fill traceability since 1995.

A comforting dish incorporating ingredients that are at their best in Autumn.
Celeriac - It may appear to be just an ugly, uninteresting, knobbly root but celeriac has inner beauty. The flesh - crispy when raw, silky smooth when cooked - has a delicate taste which suggests the flavours of celery and parsley with a slight nuttiness.

A blue cheese from Hampshire. The deep yellow moist interior is spread with dark blue – green veins. It has a rich blue taste, smooth buttery texture with a melt in the mouth flavour, without the harshness associated with some blue cheese.
