Careys Manor & SenSpa is a luxury four-star hotel and spa located in the New Forest National Park in Hampshire, England.  We pride ourselves on our friendly staff and attentive service.

Our new restaurant, Cambium, offers a fresh, contemporary yet classic style, capturing the essence of the local area and the abundant variety of colour during the changing seasons.  It offers our diners cuisine to a three Rosette standard with emphasis on simplicity, exacting flavour combinations and exemplary presentation.  Prior to his appointment at Careys Manor Hotel & SenSpa, our Executive Chef Paul Peters was Executive Head Chef at a number of three AA Rosette restaurants, including The Black Swan in North Yorkshire, and some of the most famous four and five star hotels in London including a stage with Nico Ladenis at Chez Nico, John Burton-Race at The Landmark Hotel in London and Marco Pierre White at the Hampstead Brasserie, ‘MPW London’.

The new restaurant creates an exciting new career opportunity for an experienced Head Waiter/Waitress to work alongside the Restaurant Manager, helping to build a strong restaurant team and ensuring we deliver outstanding customer service for our guests.  You will have meticulously high standards, an eye for detail and the desire to exceed customer expectations.  A major part of this role is to build the reputation of the new restaurant, delivering exceptional service for our customers experiencing dining, afternoon tea, conferences, weddings and banqueting.  We also require a knowledgeable Chef de Rang to join the new restaurant team.

Experience in a four star hotel or fine dining establishment is required as well as experience of working at manager/supervisor level.  The role would suit someone with a strong Food & Beverage background, who is an adaptable team player with proven leadership qualities. The successful candidate will be well-presented and possess first class communication skills.  A confident person with excellent spoken English and good wine knowledge is required for this position.  If this sounds like you, and you are passionate about delivering the highest standards of service and quality, then we would love to hear from you.

The role is full time, with a rota operating on 5 out of 7 days per week.  We do have staff accommodation and it is a good base to explore the South Coast.  The hotel is situated 5 minutes’ walk from Brockenhurst Village and train station with excellent rail links to Bournemouth, Southampton and London.  The New Forest is a lovely setting with ponies, deer and other animals roaming throughout the Forest and its villages, and beautiful surroundings.
