During January/February 2015, our Manor Restaurant underwent a complete refurbishment and change in concept. The new concept is a fresh, contemporary yet classic style, capturing the essence of the local area and the abundant variety of colour during the changing seasons. The new Cambium restaurant offers our diners cuisine to a three Rosette standard with emphasis on simplicity, exacting flavour combinations and exemplary presentation. Prior to his appointment at Careys Manor Hotel & SenSpa, our Executive Chef Paul Peters was Executive Head Chef at a number of three AA Rosette restaurants and at some of the most famous four and five star hotels in London including a stage with Nico Ladenis at Chez Nico, John Burton-Race at The Landmark Hotel in London and Marco Pierre White at the Hampstead Brasserie, ‘MPW London’. Most recently, Paul was the creative force behind the Black Swan in North Yorkshire giving seasonal, Yorkshire produce a modern and exciting twist. However, his contemporary style of cooking has never led him to lose sight of his grounding in classic techniques resulting in beautiful food, created to delight all of the senses.
This refurbishment creates an exciting new career opportunity for an experienced Breakfast Supervisor to join the new restaurant, establishing a professional and reputable restaurant service team and ensuring we deliver outstanding customer service for our guests. You will have meticulously high standards, an eye for detail and the desire to exceed customer expectations.
Experience in a four star hotel or fine dining establishment is preferred as well as experience of working at Sipervisor level. The role would suit someone with a strong Food & Beverage background, who is an adaptable team player with proven leadership qualities. The successful candidate will be well-presented and possess first class communication skills. The role is 25 hours per week, with a rota operating on 5 out of 7 days per week. We do have staff accommodation and it is a good base to explore the South Coast. The hotel is situated 5 minutes’ walk from Brockenhurst Village and train station with excellent rail links to Bournemouth, Southampton and London. The New Forest is a lovely setting with ponies, deer and other animals roaming throughout the Forest and its villages, and beautiful surroundings.
